Pea soup can be quite delicious and so easy to make. Has adequate amounts of fibre, a good deal of protein, and relatively low in calories. The pancetta (or smoked bacon lardons) certainly liven it up and give it an unexpected flavour. It’s the kind of soup that you can make with fridge and freezer ingredients for unexpected guests.
A good chicken soup was always thought to help towards making you better if you had colds, coughs, flu or other types of winter illnesses. This one is no different, but probably much tastier than really old recipes from years ago. It can be made with leftover chicken from a roast dinner, or by using a whole fresh chicken breast, which we have done. High in protein and a great winter warmer!
Sweet potatoes (or yams) are widely used in the Caribbean and make delicious soups and stews. Inhabitants of the islands also use peanut butter to sweeten savoury dishes, and chilli to give it a bit of fire! We have used chilli powder for those with a gentler palate, but by all means use a fresh chilli (half) depending how much you love heat!
We call this ‘mock’, purely because there are so many variations of this hearty soup from the different regions of Italy, that we have chosen ingredients that are easy to obtain in supermarkets and give the Italian flavour throughout the dish. A great recipe for vegetarians as well.
